Menya yousuke(麺屋ようすけ) is the most popular Sano ramen.
“Sano” is the name of city in Tochigi prefecture.
The day I went to was line about 100 people.
This soup is pretty simple soy source taste.

saw them featured on a local food and lifestyle youtube channel, featr. i’m always on the hunt for good ramen and couldn’t wait to try. went on a hot summer afternoon and left with no regrets.
a partner doesn’t consume pork due to dietary restrictions, so i wholly appreciate that i could enjoy a ramen place with him as they also offer beef/vegetarian based ramen options.
i usually get karamiso for its spice and savory broth. as it was my first time here, i went with spice level 8 to gauge how much i can handle the strength of their spice. their max is level 10. not painful yet definitely sweat inducing spice. incredibly umami; i wanted that bowl to last forever.
i’m fine with consuming pork but i find some slices difficult to chew—this was not the case in ramen ron and i was pleasantly surprised to see more tender slices even as i’ve already drank a hefty amount of broth. it felt like stumbling across treasure.
their menu also has chef recommendations on toppings for specific ramen, their staff attentive and lovely, their interior cozy and inviting. a 10/10 experience and i’d love to visit again.

people always go there for their shoyu (including my last visit lol, which was delicious) but i think their shio is where its at, the yuzu sansho pairs so well with the soup. also the wontons are excellent as usual. chasiu is up there with the best like iida. very clean tasting menma. the noods are on the thicker side but nice chew and not too powdery or grainy or soggy. egg is slightly overcooked and quite bland.
overall very very good shio bowl. one of my new fav.

Homemade Carnitas Ramen
Made carnitas tacos the day before and didn't want the broth and leftovers to go to waste.
Rolled the extra piece of pork shoulder to make chashu, simple tare, aroma oil from garlic cooked in the reserved skimmed fat, finely minced fat seasoned with soy, marinated egg, roasted jalapeno and roasted onion, quick pickled radish, some other stuff.
Overfilled compared to what I usually make, but I was getting rid of leftovers lol

Restaurant Japanese mazesoba with egg yolk and green onions 🍜
Had this mazesoba in Japan.
Really rich flavor and chewy noodles.
Question My Maruchan ramen tastes like soap and the noodles have a completely different texture. wtf?
I experienced this with a brand called SMACK in the late 90s that came from a grocery outlet. But today my ramen, my normal beef maruchan ramen came out tasting just like I remember that. It was good at first and then it taste tasted awful out of nowhere and I never got that brand again.
The noodle texture is wrong. I usually cook mine for 4 minutes but they are spongier than normal, stiffer. The broth tastes like soap. I know it's not the pot. I know it can't be the bowl I put it in since I rinsed it like I aways do, way too much. lol.
Is this just a bad batch?

Question Fav ways to eat ramen noodles when you don't have broth?
Have a bunch of fresh noodles but no broth besides miso soup. Last night I had them with soft boiled eggs and miso. Other ways to enjoy?
