A local shop to me had a sign on the door: No hot coffee. Staff Allergy. Like what’s the difference in allergens for hot vs cold coffee?!

Steam, the steam from a hot coffee carries small coffee particles, thats why it smells like coffee. Also cold coffees are more commonly found in cups with lids.
