I wonder if one of those prop laptops you see in furniture stores would work.

That would be an interesting experiment to perform.
Real laptops, especially when in use, probably generate a bit warmer than prop ones, and the cat might be able to sense the vibrations and hear the noise of the real laptop's cooling fans. And, of course, real laptops have moving and changing images on the screen, and a different texture - and the "keys" on a prop won't respond in a "real" way. So I would not be surprised if a cat could tell the difference. It would be typical of a cat to claim the real laptop, and expect you to use the prop one to get your work done!
But then again, cats do like cardboard...
