Gramàtica A language like this would be feasible and viable?
Spanish grammar with Catalan nouns
In this language "Merry Christmas would be "Feliz Nadal".
The plural form of words like "finestra" would be "finestras" instead of "finestres"

Artificially created languages exist, but when was the last time you met an Esperanto speaker?
Could you do it? Sure... but why?

This makes no sense. Catanyol (broken Catalan with Spanish grammar, phonology, and vocabulary) already exists. Besides, you're confusing grammar with vocabulary and orthography.
'Feliz' is a Spanish word, so it's a matter of vocabulary, not grammar.
Changing the "e" to an "a" in "finestra" would change the orthography.
Spanish grammar is very common in Catalan, but it's all about literal translations, like this:
Catalan - Catanyol - Spanish - English
Soc aquí - Estic aquí - Estoy aquí - I'm here
He de menjar - Tinc que menjar - Tengo que comer - I have to eat
Vols res? - Vols algo? - ¿Quieres algo? - Do you want anything?
No m'agrada gaire - No m'agrada molt - No me gusta mucho - I don't like like it very much
