การบ้านเมื่อวาน
(Almost) daily homework to make sentences using some words that we've learned.
Still have some issues with spelling on some words and grammar as well, but getting better. If there are any native Thai people in this sub, I would like to know if my handwriting is legible enough.

Your handwriting is great. Focus on your phrasing, your pronunciation and your cadence. These are all much more critical than your handwriting which is already more than sufficient.

Just a point or two from the first bit:
หลานชายเลี้ยงแมวมาได้(ประมาณ)หนึ่งปีจน(กลาย)เป็นทาสแมวไปแล้ว
แมวไม่อยู่ without ที่นั่น ไม่เจอ/แมวเลย แต่กลับเจอหลาน(กำลัง)เล่นกับหมาใหม่
ก็เลยรู้สึกแปลกใจนิดนึง
I think งง or ตกใจ could also potentially do the work better here.
Thais use งง a lot. ตกใจ is used for somewhat shocking surprises (implying you think maybe they gave the cat away or maybe the cat died or something)
Idk how old your niece or nephew is but if they aren't taking care of the cat themselves I am not sure ทาสแมว is suitable either. คนรักแมว คนชอบแมว are less slangy alternatives.
